Cajun Maple Crispy Baked Salmon
Amazing flavor!
1 Tablespoon Real Vermont Maple Syrup(the expensive stuff).
1 Tablespoon McCormick's Cajun Seasoning
3 to 4 small boneless skinless salmon filets, about 6" long, (can be frozen or fresh).
2 cups panko bread crumbs
1/2 cup light tasting olive oil
Cooking spray
Preheat oven to 375F. Spray a non-stick baking sheet with non-stick cooking spray.
Mix together the real maple syrup, and the cajun seasoning.
Place the salmon filets on the baking sheet, and using a basting brush, brush them on both sides with the cajun maple mixture.
In a 3 to 4 cup size bowl, mix together the panko crumbs and the olive oil till well blended. Carefully spoon the bread crumb mixture over the top of the salmon.
If using fresh filets, bake 15 minutes. If using frozen filets, bake 25 minutes. Crumbs should be lightly browned for the fresh fish, or a darker brown for frozen filets.
I served these with steamed broccoli, topped with melted daiya non dairy cheddar cheese slices.
