Simple Roasted Garlic
Buy one of those really enormous heads of garlic you always wondered about. Preheat oven to 350 degrees Fahrenheit. Take a large square of aluminum foil and double it over for strength.
With the root side down, take a VERY sharp knife and cut the top off of the garlic head. You will see a lot of flat topped exposed garlic cloves. Place the garlic on the foil, and pour about 1/8 cup olive oil on top of the cloves. Wrap the head of garlic in the foil, and bake 45 minutes, or up to 75 minutes.
I first had this served as a soft spread for Italian bread at Vinnie Testa's Italian restaurant in Dedham, Massachusetts, and it is creamy, soft, and delicious.
