4meandyou's Turkey and Stuffing "Meatballs"

1 large onion, chopped.
2 stalks celery finely minced (optional)
2 eggs
1 (6 oz) package Stovetop chicken or turkey stuffing mix, prepared according to package directions.
1 pound ground turkey
1 tsp ground sage
1/2 tsp coarsely ground black pepper
1/2 tsp salt
Vinyl gloves to protect hands.

Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with aluminum foil and spray with any non-stick cooking spray.

Chop the onion and place it in a reasonably large bowl. Crack the two eggs over the onions and add all spices. Place the stuffing mix on top of the onions and eggs and stir well. Wearing gloves, add the ground turkey to this mixture and knead and mix very thoroughly with your hands until you can no longer feel any cool unmixed turkey.

Form balls of the turkey mixture, approximately 3 inches in diameter.

Bake 40 minutes.

These are good all by themselves, but if you want to be fancy you could top each "ball" with a tablespoon of either white sauce or turkey gravy.

Serve on top of a bed of fresh frenched green beans and julienned carrots.

Marinate a chicken breast overnight in buttermilk (store bought or make your own)
Drain chicken breast, let it come to room temperature, then gently, lift, do not remove the skin from the flesh.
Score flesh and season w/ your preferred seasoning.
You will have prepared a stuffing ahead of time: (I used cornbread) In a food processor I crumbled a piece of c/bread, to that added, one egg white, sautéed onions, celery, and apple w/ honey, cinnamon and some melted butter, some dried thyme and poultry seasoning.
Carefully place under the skin (If you need, place t/picks (wet first) through skin into the flesh. Why? Skin can pull backwards. Lightly oil skin side.
In a foil lined, lightly buttered pan, place breast and bake for about 45mins-to an hour @350F in a pre heated oven. Check for doneness w/meat thermometer. Let it rest for about 5-7 minutes.

* Sometimes I wrap the breast in lightly buttered slices of ham w/ brown sugar.
