How come no one wants to hire you after you have like 25-30 years experience in your line of work?

you are the hotel management person--in your case it is timing. you are in a narrow niche and you just have to be in the right place at the right time. Which I am sure is hard to do. Also I am guessing in your line of work 5 years of exp is the same as 25. Extra experience does not give you a completive advantage like it does in other professions. .
