Do you think it's petty to CC the manager when corresponding via email with co-workers?

Sometimes co-workers do not give the info that they need to in a timely manner.
We are supposed to work as a team. You have puzzle pieces that I need, but you are not giving them to me, like you are SUPPOSED TO.

Do you think it's petty to continuously include the manager in email correspondence with co-workers, in order to cover my own ass and show that "hey, I reached out to them on last week for this info"...

I think that's the manager's call. There's probably a lot of nonsense back and forth's that are filling up his or her inbox. Some want to know everything and others don't care. But it is wise to save your own CYA emails if you're not copying management in.

@Ynotisay manager actually requested I cc her on today. She ASKED herself " have you gotten xyz yet"?

@iamnikki If they're asking then there's a reason. I'll still try to find out the preferable protocol.
