Thoughts on quitting your job and doing something completely new?

I do not wish to be trapped in a single job my entire life, like society wishes. I want the freedom to change from science to art, art to literature and so on. Why does this not seem to be an option taught in schools and colleges?

You are not limited to what is taught in schools and colleges. You are limited by what you can imagine and your ability to get there.

Mostly, it is assumed that someone seeking a degree in a particular discipline wants to be an expert in that field. If you are doing charcoal sketches in Mexico for a year and then return to science, you may find yourself dramatically short of the leading edge.
