I've already signed the contract for the show and it would benefit me in the longrun, but I've known her long enough to know that she would make it difficult. I also know that this would be the last job I'd be able to do with her, which would be a tough pill to swallow.

How could she make it difficult? Honestly if she cannot put her feelings aside then she should quit not you.

Be professional. She's being immature and agressive telling you to quit over something personal. That's not very mature of her.
