You can't get out of the updates entirely. Eventually the games will stop working. I can think of three options.
1 uninstall all games you don't use. There will be fewer updates.
2 Set updates to happen automatically when you're not playing. Then they should mostly happen when you're not on the console.
3 Set updates to not happen automatically and so them yourself when you're in the mood for it and not inconvenienced by the updates.

If your xbox is new then be prepared for loads a updates! Happened to me on Xbox 360 in 2013 on every single game that was "New" on my 360.

I miss the days when they released a game and that was it.
When a good game was complete and fun enough that it didn't need constant attention with seasons, battle passes and updates, etc

Probably have them update when your console is on rest mode. I do that on my ps5
