I enjoy just about any game with a large open world and an interesting story. Most of the time, I forget about following the story and just get lost in exploration. With today's graphics, we have the opportunity to explore beautiful, breathtaking environments that we may never get the chance to enjoy otherwise. For example, here's a screenshot from Red Dead Redemption 2.
I love getting to do some horseback riding through nature from the comfort of my living room. Granted, nothing compares to actually going outdoors, but we don't always have the chance to do that.

@RachelLia2003 I have Plague on my phone. It's interesting, especially given the current situation. Cities: Skylines is an amazing game. I have it on Xbox, along with several DLCs.
