I'm sure they'll make more elder scrolls games; elder scrolls online is proof of that. I don't know if they'll make one that's (chronologically) based after skyrim for a few reasons.
1. Your the dragonborn in skyrim, everyone I know at least loved being the dragonborn but It would be nearly impossible to do that again because we already know the full detailed history of every dragonborn before skyrim and if Bethesda went back to making just "champion" characters instead of "dragonborn" characters, well I'd be a little disappointed at least.
2. There were so many big things and big decisions that happened in skyrim that unless Bethesda adopted the save file transfer mechanic that is used in games like mass effect and dragon age they wouldn't be able to build another game that takes place after skyrim. Some people killed parathunux, some people didn't, some sided with the legion, some sided with the storm cloaks, some killed the dark brotherhood. There's just no way they could make a "default" setting for a chronological sixth elder scrolls with all these different options.
I have no doubt they'll make more elder scrolls but we shouldn't expect to see any more, at least chronologically, set after skyrim
