A question

We say cows milk, not the type of cow it comes from.

We say goats milk, not the type of goat it comes from.

So why is it almond, and not simply nut milk?

I would imagine that the particular nut matters for allergy purposes, and the taste from nut to nut would be very different as compared from goat to goat.

That just looks wrong, no matter how you phrase it.
