I might need to get a new phone soon, and I'm honestly considering switching over to Apple. I like the iPhone 12 mini

I dislike the apple prices and gotten used to Android.
But apple is trying to protect your information more than anyone else and it's not close, while the other collect all the data they can.
Also apple is attempting to make it so you must go to apple to fix or improve anything on your phone, so where you can't do it yourself or have some 3rd party do it.
Again, do you want to pay the extra price for apple stuff, and might be stuck with only going to them, vs more privacy.
