Most chocolate ice cream is effectively milk chocolate which I find repulsive. There are a few brands of dark chocolate ice cream or gelato that do taste like real chocolate.

Because the flavours in chocolate are fat soluble. Ice cream has some fat but mostly water so you don’t get the flavours delivered to your taste buds as effectively as you do when you eat chocolate.
