Why do some people think they have to change who they are and talk a certain way just because they are talking to people of a different race?

A serious reply. In over 50 years of much international travel and working in different cultures, I have never once seen an example of what you describe when it is done without the complicity of the interlocuter. So that when groups of mixed cultures and ethnicity get together, they willing and in good humour and friendship share cultural and linguist differences. Often it is self-mocking! Because we all know the idiosyncrasies of our own tribe, our own nationality, our own race and so on. Sophisticated and intelligent people are the finest mockers of their own status.

Its not a big deal,I don't know why people make big deals out of nothing all the time.
Other people bring out different sides to us, we are typically a little different with all of our interactions and relationships.
Relationships can influence you and change you...I carry a piece of all my old friends and exes in my personality and they do me also, if you spend enough time around someone, that's what happens.
Some people are people pleasers, some people are fake, there's no surprises but personalities flow, grow and change, if you haven't changed in your life then youve got problems

People tend to get offended with my slang.

Nobody has told me they like noodles but I have had encounters where someone talks slower and louder to me because they assume I'm fresh off the boat and have questionable English. Jokes on you because I am pure american and have zero accent so ha ha ha

I've noticed that some people do that and I think it's just to fit in or they might think it'll make the other person more comfortable and relaxed, in a slightly ignorant way. I don't put on airs, I'm me and talk the way I do to everyone. Though there are times my friends and I would talk certain ways to mess with tourists on the boardwalk. :D That was fun.

Well, it depends. Some people “mirror” accents, for example . Others are hung up on stereotypes.
