Are Zombie themed video games played out?

I think Resident Evil was one of the first, and it was awesome, but since that time, they've made 8 other REs and the concept seems to be trendy. Even Call of Duty has gone with the Zombie theme.

Yes, they are. There have been too many made over the last few years. It has saturated the market and given people too many choices. It also doesn't help that they are pretty much all cross-platform. As for COD, I think that is why the latest game does not have a zombie mode.
