Most Indian dishes(especially vegetables) have similar starting routine.
1)Chop vegetables,onions, garlic etc
2) heat oil in the pan
3) add onions
4) either you add vegetable here or add some other stuff first(depends on what you're making)
5) add spices, masala
6) cook

@midnightsun Yes, the main idea is to stop cooking before anything burns and not to cook on too hot of a heat, if the pan is spattering oil it’s to hot, if it’s taking to long to cook it’s too cold. I hear the pan on high heat for about 3 minutes add my oil and drop the stove heat down to 3.5 (I have an electric stove) then I add veggies. It works great with eggs this way
