I prefer wings with no breading. I believe that is the original way. You can put a batch in a bowl, toss em in a little olive oil, season them up and put them in a 450 degree oven. Should take about 30 minutes. Turn them once. Then into the sauce.

@Carla This is the easy way.......but good. I put my wings into a smoker for about 1 hour at 250 degrees---apple wood. Then sauce them--into the oven to finish and make really tender.......and BAM...party time.

@anythingoes477 that sounds really good, too. I love smoked....anything. i use applewood, almost exclusively. I reckon because i have apple trees.

@Carla Then just use a grill.........put some soaked apple wood chips in a foil packet--punch holes in it and lay it over a grill burner to get the chips lit. Then move the packet to a cooler area so they don't burn up--just smoke thru holes you punch in the foil. As you grill--you get a light smoke taste.

@Carla Ya know---if you substitute thighs for wings and do everything else the same........you end up with a bigger bite and it's just as good if not better. Thighs are always cheap......now and then i do thighs instead and I almost like them more than wings.

@anythingoes477 ive done that. But i just dont get that crispness so easily on thighs. And, wing meat seems less dense to me.

@Carla Smoking fixes the denseness.....it slightly dries out the meat---more than other cooking methods. That changes the mouth feel.

@anythingoes477 ive smoked many whole chickens. Thinging about it, i dont think i have done just thighs. May be a food project in my weekend plans:)

@Carla thighs are juicier than white meat so don't use a pan with water or juice in the smoker. Up the cook time to about 1 hour and 20 minutes at 250---from wings (just an hour for them).

@anythingoes477 no...never use liquid in my smoker. I will inject pork at times, but i dont even soak my applewood.
