@NativeOregonian Cooters are a different species. From what I've heard, snapper meat isn't very palatable.

@windinhishair My cousin called all turtles cooters, and would not be bothered by the taste, to him meat is meat. My cousin makes Billy Bob Thorton in Slingblade seem intellectual by comparrison.

@NativeOregonian Got it. I'm the exact opposite. If I see a painted turtle, I like to know which subspecies (eastern, midland, southern, western).
I'm sure you can eat snapping turtle. It would be a very tough meat though.

@windinhishair He would make it tender either by low and slow smoking it first, or in one of those huge ass 20 quart roaster slow cookers.

@windinhishair 21 years ago I worked at a BBQ and steak joint, we had a Southern Pride rotisserie smoker, the Rolls Royce of all smokers, and I learned the proper way to smoke brisket, 210f for 14 odd hours, depending on size, leave whole, do not trim fat cap, fat cap on top, heavy rub, and it will be perfect every time. Always with mesquite.

@windinhishair Same here. When I worked there I was always trimming a bit to snack on. it was so tender and juicy that it melted in your mouth.
