Why do people find it so hard to differentiate between "you're" and "your"?

lol YES! Good question, and, akin to "its" v. "it's", easily controlled-for or caught, but often written incorrectly.
I just saw a post's reply thread where the replier had misused an apostrophe. Another SWer called her on it and she first said it was for the plural form (it wasn't) then, when again called out, went ballistic, insisted she was correct, and quoted some other site...but the quote was about Father's Day v. Fathers' Day and still did not cover her misuse of the apostrophe...!
(To be fair, the one calling her out got a little insistent, and she claimed he was a known troublemaker for correcting people on "Grammer" [sic]...but he didn't correct her spelling. 😉😆)
