@sassycookie They use what we know about humanity's origins (or think we know) based on information gathered from fossils to show what our ancestors were like. Different species of apes through the ages that would eventually lead to the first humans. They use actors and CG to not only show what scientists believe they looked like, but also how they believe they lived their day to day lives.
