I'm not sure if you're including the internal parts or not. If yes, then I think the brain. If external only, the hands would be it for me

@SW-User namely, the history of its evolution, but also the complexity of its current anatomy and physiology. Also, how aging and disease affect them.
They're key in character drawing. People first look at/notice the face and hands. They say a lot in appearance and movement
