It was a symbol about God sacrificing his son.
I view this:
1- Historically humans had tough life, bloody most of the time, men went to fight or hunt for the family or the tribe, and they faced death thus the sacrifice.
2- there is a lot of guilt and fear in Jeudiasm, Christianity, and Islam, reword and punishment,I think this is worked in the past when people thought that the earth was flat. Today, we know and understand more about our biology and psychology, so minimizing the guilt.

Animal sacrifices were only a shadow (type) of the final sacrifice that was to be made by Jesus. When Jesus died He said, "it is finished" - meaning the old law was now fulfilled.
