@swirlie and then let them handle it - there's no sense getting in to a fight with the wait staff and making a scene.
if they are incompetent the management will retrain or fire them.
maybe it's something out of their control - that would be up to the management to decide - PLUS they have the power to adjust your bill for the bad service.
