I Am Fascinated By Human Behavior

Why does some people start an activity or a project, hobby...whatever...but they never finish it and leave it to start a new one so the same pattern is repeated again?
I mean which psychological explanations could be behind this behaviour?

Sometimes I get stuck on a project because I've hit my creative limits, so I'll move on to a new project to keep the momentum going, then return to the old one once I up to challenging my creative "block".
