Why if the country is Great Britain, and the people are British, do they all seem to speak English?

Great Britain is the island. It's a geographical landmass not a country.

The United Kingdom is the country but there are countries INSIDE the United Kingdom.

One of them is England. That's where English comes from.

@CountScrofula Great Britain is the name we gave our selves at the height of the Empire I think, I maybe wrong though

@MarieUK I think the Romans or Greeks are the origin of the name, but you're right it wasn't really used by the British until the empire was hoppin'
