Raspberry Balsamic Vinegarette
I'm doing meal prep for the week and thought I'd hare my homemade recipe for a salad dressing I'm addicted to.
It is simple to make - takes maybe 5 minutes and low calorie, low sodium and filled with goodness!
Ingredients (you'll need to vary the amounts of oil, vinegar, raspberry reduction and honey to suit your tastes):
3oz fresh (or frozen) raspberries
7oz Balsamic Vinegar
4-5oz Extra Virgin Olive Oil
2.5oz Raspberry Balsamic Vinegar Reduction
1-2 Tblsp Honey
Put all ingredients in a medium size deep bowl or blender. I use a bowl and mix with my immersion blender, but a blender works too.
Blend thoroughly until you no longer see whole or any parts of a whole berry.
Taste and, add more oil/vinegar/reduction or honey to suit your taste.
Using a funnel, pour into a dressing bottle/carafe and pop in the fridge. You can strain the seeds from the berries while doing this, but I leave them for all the nutrients they provide.
