Like men, not eggs are created equal nor do all eggs look the same and size really does matter!
I actually researched the life cycle of an egg and made a shocking discovery.
Eggs that are very inexpensive in a supermarket come from chickens that are fed a pelletized food product that is made from animal fat and other animal byproducts, all of which are processed and pelletized in China, then sent over to North America as animal feed. This includes fish food for salmon which are raised on salt water salmon farms.
The pelletized food causes the egg's shell to become very thin and the yokes to become a light yellow in color with a distinct lack of egg-flavor. This is because of the high content of animal fat contained in their feed and the lack of protein.
When it comes to salmon from salmon farms (which by the way are located in China as well), the salmon gives off a greasy smell when broiled and will coat the overhead stove exhaust fan with a layer of yellow grease that would not otherwise be present with ocean-caught salmon.
Those eggs you mentioned are $2.99 for a reason! It's the old story... you get what you pay for!
