Where do people in China end up at if they're digging a hole?

Their antipode, of course, as it would be if you're digging a hole straight through the earth to the other side... ignoring all other parameters and circumstances that could easily kill you and prevent you from doing such in the first place... xD The antipode is the part directly opposite to a given point on the other side of the earth (major-diameter-wise).
