Why would a woman apparently not let go of a man she rejected beforehand?

First acting like he should disappear forever because of her new boyfriend, but once he does, she's the one acting like she's never said so (despite said boyfriend).

It’s not easy to say goodbye to someone you care about. She’s probably got reasons for saying goodbye, but she’s also probably second guessing herself.

@NewRaven If she rathers the bird in her hand than the three in the bush (I hope I've translated this correctly) then who am I to throw my life over for whatever is going on in hers? She told me she wanted kids some day, and shortly later she told me I should better find a job soon. She not necessarily meant having kids with me I'd say, but 2 years later (and a year since me avoiding her) she again treats me like she did when she quit with her previous bird in the hand. She seems like it's about a lack of intimacy after all, but as soon as a woman interferes into my job life, I feel like attemptedly forced into asking her out.

There is another woman in my life by now, who I got to know a few months after said one "surprised" me with her bird in the hand (I've never asked for that info, neither with the second one). And for "my new woman" it's unfortunately the same case still, of waiting for me to get a job. But since I got to know that woman in the job I got during covid times, I had the chance of letting her know that I planned on staying with this employer (a regional hospital). Long story short, even though this was 2 years after I got to know her, she was still happy to see me and seemingly even more to get to know I wanted to stay (meanwhile rather come back to) this employer. It's just not about talk of other men or any pressure into having kids.

After all it's a soothing thought that this first woman might regret what she did there.
Never mind her, she's selfish and unreasonable.. she doesn't want you ruining her relationship with her new bf but she still wants to string you along too

@SStarfish string along for what purpose?
