I think it's perfectly fine to eat one day and skip the next because it balances out.

Say you ate too much one day and the next day you eat next to nothing. It pretty much makes up for the day before and it tricks your body. If you zigzag your body doesn't get used to living off of certain calorie amounts so you dont get stuck in a rut.
