It's simple. The photos of Earth are taken with exposure settings tuned to the bright sunlit Earth. With those exposure settings, most stars are too dim to register. And even if the camera sensor had enough dynamic range to capture a handful of photons from each star, the image still has to be fit into the 0-255 jpeg range.
