Best is just to disable what you can, autostart apps as well as permissions. Then clear all caches periodically.

Many don't know that even the service providers monitor though and that is impossible to disable.

Try turning off text messaging some time. Haaaaa!

Faraday cage or not text apps still will reenable themselves and send what is available in the cache at a later time.

Are we being tracked by service providers? Probably.
Is it part of a global conspiracy? No. It's for making money, like everything else is.
