Vitamin C dissolves easily in water. This is a thin layer of vitamin C water solution dried on a microscope slide. When the water evaporates, it forms tiny crystals of vitamin C.
These crystals have a birefringent property. Birefringent crystals, also known as doubly refractive crystals, have the unique property of splitting a single light ray into two rays with different polarization and speed as they pass through the material.
These when viewed under polarized light create such wonderful patterns from the splitting of light when they pass through the crystals. And a microscope just brings out the beauty by magnifying it.
