rhodesian ridgeback

I had went to the shelter to find a good dog who clicked with me to become a service dog... to be trained myself. Well he has running stool and it's green looked online said it could be to much fat in his food? Anyone know please let me know

Could be a lot of things, but the fat in the food is not causing this. Assuming you recently got him, stress from a new home and change in food can cause this. Could be parasites, but odds are the shelter has already dewormed him. As long as he is acting himself I would keep doing what you are doing until you can get him to your vet.
girardia?

I'd take him to the vet. For a basic check up... often dogs from the shelters are sick.
