I wondered whether it was true, so I did some searching.
Apparently this was not just done by the Apollo 11 astronauts. Crew members from subsequent Apollo missions did this as well. Several days before their respective launches, they would sign multiple envelopes and mail them, with the idea that the postmark would correspond to the dates of the mission.
