So there is talk that after billions of years, the sun will die and it will grow so large it will grow into the Earth.

So let's say humans live that long, and they build subterranean tunnels. Would that event of the Sun destroy Earth? If it doesn't destroy Earth, could humans survive such an event by living in subterranean tunnels?

No.
The sun's mass will grow as it enters it's dying stage.
It will gravitate toward the earth because we're already in it's orbit.
The seas will boil; all life will die as temperatures hit the hundreds or thousands of degrees and it's gravitational force will probably rip the earth to pieces before the heat vaporises anything left turning it to dust

@Picklebobble2 Best answer.....The earth will be ripped to pieces.....so no tunnels needed.
