But is there a sexual situation called 'knifing'? I know almost everyone will immediately thing it means violence, perhaps DV, or worse as in a crime, but I'm asking about sex not murder (perhaps on the dancefloor).

I used to think I was kinky but then along came the internet and made me realise I was vanilla. If knifing gets you wondering then 'space docking' is going to blow your socks off -warning once you know what it is you can't unknow it.
