They don't understand them. In the spring they are the first foods for the bees. For the humans they are very nutritional and while the leaves can be slightly bitter the flower is like honey.

@curiosi i was digging up some in my back yard and pulled up a huge nest of baby ladybugs. Ladybugs love to lay their eggs in the roots of dandelions.
