Why are Highland cows so much better than regular cows?

You may have to qualify that. If you're talking aesthetics then....I can see that. If it's about the meat carcass, I'd read once that there's is very good in terms of it's lean quality. There's their ability to tolerate harsh climate and subsist on poorer grades of pasture, so there is all that going for the breed.
I wouldn't mind hearing how you'd come to the conclusion.
