Bothe F and C are equally arbitrary. Water freezing and boiling is some magic thing that it matters at all where it boils and freezes at. It's completely inconsiquential and irrelevant.

The only reason it was picked for centigrade in the first place was it was seen as an easy way to calibrate thermometers in the lab
