I can't decide which would be the harder:
The violin family, with no frets.
The organ, especially a large one necessitating quite a lot of movement to use the pedals and to reach the stops and couplers arrranged on the sides of the console; with two to four keyboards, perhaps five on the largest instruments.

@FreddieUK Ah, but they can still play on only two keyboards and one pedal board at a time!
I suppose the first thing any visiting organist has to learn is the individual's organ's layout and reach.
Anna Lapwood was describing on a the radio a while ago, practicing the Royal Albert Hall organ in the dead of night. She said she's not quite alone in the building, and she's had interesting conversations with these staff members - the cleaners, security, etc.

@ArishMell Actually, it's even more clever than you suggest. A technique called 'thumbing down' means that a thumb stretched down can play single notes on the manual below while the other fingers play, so three manuals are possible at the same time. (I've never seen it done with both hands
My grandfather taught me how to play the accordion 🪗 when I was a young lad 👍😅

My old guitar teacher reckoned it’s the violin. Because it’s really hard to even get a sweet sounding note out of, let alone a coherent tune 😆

The bagpipes.
When I took music class in my second year of High School, my classmates and I were all given a turn at trying out the bagpipes.
And when it came to be my turn, I was blowing into the mouthpiece, trying to blow the bag up with air with no success.
And with all my classmates watching as I struggled to blow the thing up, I felt so embarrassed.
Plus, I felt like I was either gonna faint or bust a lung after about 10 blows.

@SpectralMourning I tried playing the bagpipes in my second year of High School.
But all it ever amounted to was me blowing into the pipe to try and get some air into the bag with no success.
And especially with all my classmates watching.

I feel any instrument that uses control of breath has to be difficult - like a flute or a trumpet or a mouth organ.

The church organ.

Anything you have to blow into - I'd probably pass out after 2 minutes....
