Original trilogy, prequels were alright, new trilogy is... decent. Favorite is Rogue One. Even though they are not cannon anymore, you should read the Heir to the Empire trilogy by Timothy Zahn.
There's a scene in Last Jedi where Poe Dameron is standing in the Hangar bay while the ship is jumping to warp. The open door strobing brilliant white, as he watches deep space flash by.
Small moments like this made the series magic for me.
