STP is relevant because if you don't know what pressure the acid is under you can't calculate the actual mass and hence the molar quantity because the volume of a given mass of the acid varies with pressure.
Of course you also need to know how concentrated the acid is.

@ElwoodBlues It starts to decompose into SO3 + H2O before it reaches boiling point though.
My point was that it is somewhat compressible, as most liquids are. And to calculate chemical reactions you need to know the mass rather than the volume. So specifying that it is at STP allows you to look up the density in standard tables of physical properties (or Wikipedia).
I daresay that for most purposes the values at STP are close enough at most practical reaction temperatures.
