I like Sister Sarah goat's cheese (local ish here) It's a soft hard cheese if that makes sense.
Kefalotiri - Greek cheese.
Welsh cave aged cheddar - so salty is crackles on your tongue.

This company makes a lot of nut/seed flour and very thoughtful stuff. So satisfying. And a local place makes pickled shredded Korean carrots in jars sometimes 🫠
