Key to a good French fry is both the temperature — at ~325°F (first) and 350–375°F (second) — as well as the type of oil (or sometimes lard).
I find that most of those fast food places go cheap on the type oil. Or skip the first fry temperature. They get away with skipping because of the smaller fries.
Try coconut oil sometime. It has a high burn temperature as well gives the fries a slightly different taste.
Yeah coconut oil is a bit expensive. You get what you pay for though.
McDonald's food occupies extremes. Something's are very good, like their milkshakes (or at least they were when I was drinking dairy) but rotten for a lot of other things. I'm good with their fries though
