The hard problem of consciousness rears its ugly head. How is an action potential (or electrical signal) giving you the sensation of "red"? Just as it wards against psycho-physical reductionism given the limits of our understanding, it also wards against anything purely mechanistic. No, we are not living in a simulation, and no, there is no probability that we are. Unless the simulation is so advanced it has hard copy robot platforms which house our individual consciousnesses...at which point we're at androids and West Wing, and not "a simulation". It's amazing what sorts of fantasy worlds people want to be true.
