Can one be interested in a person but not consistent?

I absolutely believe so! Why become interested and can’t be consistent with them?

I'm inconsistent but its not deliberate. I have anxious avoidant attachment so I feel and connect but then I panic and shut down.
I struggle with it badly.
I try to overcome it for myself and the sake of others but fight or flight kicks in and before I know it I'm shutting down or running away
