I'll never figure this out, but both Subway and Jimmy John's uses the same brand of tuna, but while Subway's tuna is full of flavor, JJ's has none, and even though I have a very refined serious home gourmet palate, I cannot figure out what's missing, other than JJ's is super dry compared to Subway, and even when I scrape it out and add more food lube, salt, and pepper, it still lacks taste. The only explanation I can think of is that I know Sunway uses chunk light, I suspect JJ's uses albacore, which has no flavor.
