If I should eat a low sodium diet... can't I just drink more water to dilute it? (I clearly know nothing about science)

@SW-User The WHO recommended intake of sodium for people with no history of genetic blood pressure issues is well below ideal. Too little sodium has more detrimental side effects than too much. Ideally you should be getting between 2000 and 6000 mg a day. Drink to thirst.
