The right oils are healthy and necessary for the body. Their use of oils is likely offset by the fact they eat a well-rounded diet otherwise. Also, while Americans like to think they don't use things like fats, oils and salt because they don't sit on the kitchen table, the fact is processed food is literally swimming in the stuff and our intake is as high or higher than any country in the world. Really, very little of the Mediterranean food I've come across is fried but done right, frying shouldn't impart that much oil to your food. It's not meant to soak into the food - it's meant to be a conductive way to heat your food until cooked. You still walk away with some oil of course, but not nearly as much as you might think if fried well.
Don't forget the other half of the equation, either. I'm willing to bet few collective groups sit around as much and exercise as little as the typical American. Move all day and you can eat what you like. Dive to work, sit at work, play games, sit on the couch and go to bed each day and you'll only need about 900 calories a day. That's two muffins.
